Diamond Hotel welcomes new pastry chef Paul Gardin

Diamond Hotel’s general manager Vanessa Ledesma Suatengco proudly announces the appointment of their new executive pastry chef, Paul Gardin, a talented French pâtissier who aims to raise the level of the hotel’s already remarkable line-up of sweets.

Chef Paul Gardin was born in Paris, France and had started his career at the age of 13.  At 15, he became a pastry apprentice at Restaurant Le Braisiére in Paris then moved to Hotel Les Hetres, both establishments has a Michelin Star.  In 2006, he became a pastry apprentice at Restaurant Le Meurice Palace, hailed as the Best French Restaurant in 2007 and is run by 3 Michelin Star chef Yannick Alléno.

In late 2007, he became Chef de Partie in Hotel Les Hetres and since then, he has worked with different restaurants around France learning new skills as he went up the ranks.  Opportunities to work overseas brought him to the Carribean Islands and Australia, before coming back to Paris in 2009 to work as Pastry Sous Chef for 3 Michelin Star chef Antoine Westermann’s Restaurant Le Drouant. In mid-2010, he became the Head Pastry Chef of Beirut Hospitality Company located in Lebanon at the same time providing consultancy services to Restaurant Le Drouant in Paris.

Before setting his sights on Diamond Hotel Philippines, he was the Executive Pastry Chef of Lenôtre and was managing Plaza Food (gourmet retail shop) in Bahrain where he supervised the culinary activities of 120 people from May 2012.

Chef Paul’s interest in food started when he was 8, visiting pastry shops every weekend with his father and sampling different treats. His expertise covers pastry, bakery, ice cream and chocolate work. He ensures that his creations adapt to the taste of the guests of the country where he is based and makes use of available ingredients.
