First Edition of Michelin Guide Philippines Bestows Old Manila and Spices Restaurants of The Peninsula Manila with "Selected" Distinctions

In its debut year in the Philippines, The MICHELIN Guide – the ultimate symbol of excellence in the world of fine dining for over a century – has awarded “Selected” distinctions to Old Manila and Spices restaurants at The Peninsula Manila.

Under the guidance and leadership of Food & Beverage Director Katsuma Tokitsu and Executive Chef Remy Carmignani — along with Executive Sous Chef Alex Destriza, Head Pastry Chef Annalyn Solano, Old Manila Chef de Cuisine Matthieu Fournier, Old Manila Sous Chef Angelica Cuña, and Spices Sous Chef Leo Rabino — these recognitions clearly demonstrate The Peninsula Manila’s vibrant culinary culture and underscore the value it places on creativity and craftsmanship. Wine lovers need not wait long to treat themselves to a night of delicious bites paired with great wine as The Peninsula Manila is having a wine dinner celebration in Old Manila this June.

On Wednesday, June 1, 2022, Executive Chef Xavier Castello is creating a five-course dinner in Old Manila complementing one of Spain’s most celebrated wineries –  Bodegas Emilio Moro.

2021 Old Manila Wine Dinner Series Continues

The 2021 Old Manila Wine Dinner Series continues, featuring Old Manila Chef de Cuisine Allan Briones creating a lovely five-course degustation menu paired with wines from Spottswoode Estate Vineyard & Winery on Wednesday, July 20, at The Peninsula Manila’s signature fine dining restaurant Old Manila. Price per person is P12,000, inclusive of taxes.

This will be the second time this year that Chef Allan Briones is collaborating with an award-winning vineyard and winery, and creating a dinner around the fruit of the grape. Chef Allan and his culinary team will prepare a post-summer meal using fresh seasonal ingredients that highlight the culinary strengths of Old Manila’s culinary team.

The Peninsula Manila presents The Soul of Taittinger Champagne in Old Manila


Old Manila loves Champagne dinners and Chef de Cuisine Allan Briones is delighted to announce that the first one this year will be an amazing Taittinger Champagne Dinner on February 6, 2020.

“With its rich history of family tradition and a legacy of excellence, Old Manila is honored to present five exemplary Champagnes from the renowned French Champagne House of Taittinger,” says Old Manila Chef de Cuisine Allan Briones. 

“My menu has been designed with the distinct qualities of these exemplary Champagnes in mind. The Lobster, Scallops, and Avocado course, for example is paired with the iconic Comte de Champagne.   For those unfamiliar with Comte de Champagne, it is Taittinger’s flagship Champagne in the same way that Moët & Chandon has Dom Perignon and Louis Roederer has Cristal.”
