In its debut year in the Philippines, The MICHELIN Guide – the ultimate symbol of excellence in the world of fine dining for over a century – has awarded “Selected” distinctions to Old Manila and Spices restaurants at The Peninsula Manila.
Under the guidance and leadership of Food & Beverage Director Katsuma Tokitsu and Executive Chef Remy Carmignani — along with Executive Sous Chef Alex Destriza, Head Pastry Chef Annalyn Solano, Old Manila Chef de Cuisine Matthieu Fournier, Old Manila Sous Chef Angelica Cuña, and Spices Sous Chef Leo Rabino — these recognitions clearly demonstrate The Peninsula Manila’s vibrant culinary culture and underscore the value it places on creativity and craftsmanship. Each restaurant reflects the hotel’s passion for exceptional dining experiences.
Old Manila is the hotel’s 49-year-old fine dining culinary landmark that embodies the art of refined French cuisine. Spices, with its vibrant flavors drawn from across Southeast Asia and India, has been captivating guests since it opened in 1991.
